  • 6 sheets nori seaweed paper

Avocado & Asparagus Roll:

  • 2 avocados, sliced into thin strips
  • 10 asparagus spears, trimmed and blanched
  • 6 sheets nori seaweed paper
  • 1 cup cooked sushi rice
  • 3 tablespoons rice vinegar -2 teaspoons sugar or agave nectar – 1/4 teaspoon salt

Sweet Potato & Nori Roll:

  • 1 large sweet potato, peeled and thinly sliced into strips
  • 6 sheets nori seaweed paper
  • 1 cup cooked sushi rice
  • 3 tablespoons rice vinegar
  • 2 teaspoons sugar or agave nectar
  • 1/4 teaspoon salt

To make the Avocado & Asparagus Roll:

  • Place a sheet of nori on a flat surface and spread 1/4 cup of cooked sushi rice over it in an even layer. Leave about a 1/2 inch of space at one end of the nori paper.
  • Place 2-3 strips of avocado in a line at the edge closest to you and top with an equal amount of asparagus spears.
  • Starting from the edge closest to you, begin rolling up your nori sheet with the filling inside using your hands or a sushi mat (if available). Seal your roll by wetting fingertips with water and pressing down on the last bare piece of nori paper before completing your roll up motion.
  • Dip a sharp knife in water and slice your roll into 6 even pieces. Serve with soy sauce, wasabi, and pickled ginger (if desired).
